Rajkot : Wadi and farm parties in Jamnagar and Saurashtra make bajra roti and ghuto all together a must having dish on winter evenings and nights. Let us know about this traditional Ghunto recipe. Ghunto is also famous as Varadiyu in Gujarat, Varadiyu means a dish which doesn’t use even a drop of oil and gets prepared in steam only.

Ingredients :
Get all the winter vegetables and fruits as well as beans and boil it for 4 hours to make Ghunto.

Ginger, Lemon, Orange and White Turmeric (which looks like ginger, easily available in winter), Tomato, Tadarjani Bhaji, Dill Leaves (Sepu/Suva Bhaji), Fenugreek Bhaji (Methi Bhaji), Choli (Green Beans/French Beans), Eggplant, Potato, Cauliflower, Cabbage, Guar, Peas, Valor Papdi Seeds, Green Chickpea,Bottle Gourd, Green Chilli, Coriander, Fenugreek, Turmeric, Yam, Carrot, Green Onion (Spring Onion), Green Garlic, Mogri (Moongre/Radish Pods), Radish, Green Onion, Green Peas, Sweet Potato, Potato, Tindora (Tondli/Coccinia), Galka (Sponge Gourd), Turiya (Ridge Gourd), Tindia, Coriander, Mint, Beet, Ghuto Is Made By Combining More Than 33 Varieties Of Vegetables Including Fruits Like – Apple, Pomegranate, Banana, Papaya Etc. Fruits, Pepper, Cinnamon, Cloves, Badia (Star Anise), Javintri, Tamal Patra (Bay Leaf), Salt And Water.

Method :
Cut the vegetables including the fruit in very small pieces, fill a vessel with water, boil it and put all the vegetables in it. Then shake it with a wooden handle. Thus, after boiling and continuously mixing all these vegetables and fruits for 4 hours, it becomes like a thick gravy and it is ready to eat.
